Our homemade granola recipe

I don’t know where this originally came from, so I can’t give credit. It’s long existed on my phone as a hard-to-read photo of a paused YouTube video. Time for it to get written up:

Pre-heat oven to 180C

Mix dry ingredients together

  • 1 cup oats
  • 1 cup coconut chips
  • 1 cup roughly-chopped dates
  • 1/2 cup roughly-chopped roasted almonds
  • 1/2 cup currants
  • 1/3 cup buckinis (buckwheat kernels), or substitute 1/4 cup flax seeds
  • 2 tbsp chia seeds
  • 1 tbsp cinnamon
  • 2 1/2 tbsp protein powder (recipe says 2.5 servings)
  • 1/2 tsp salt, or to taste
  • chocolate chips, to taste

Then mix in wet ingredients

  • 2.5 tbsp coconut oil (slightly warmed to make it runny, for more consistent mixing)
  • 1/3 cup rice malt syrup

Final step

  • Line oven pan with baking powder and spread mix evenly
  • Optionally drizzle vanilla extract over top
  • Cook at 180C for about 10mins
