Our homemade granola recipe
I don’t know where this originally came from, so I can’t give credit. It’s long existed on my phone as a hard-to-read photo of a paused YouTube video. Time for it to get written up:
Pre-heat oven to 180C
Mix dry ingredients together
- 1 cup oats
- 1 cup coconut chips
- 1 cup roughly-chopped dates
- 1/2 cup roughly-chopped roasted almonds
- 1/2 cup currants
- 1/3 cup buckinis (buckwheat kernels), or substitute 1/4 cup flax seeds
- 2 tbsp chia seeds
- 1 tbsp cinnamon
- 2 1/2 tbsp protein powder (recipe says 2.5 servings)
- 1/2 tsp salt, or to taste
- chocolate chips, to taste
Then mix in wet ingredients
- 2.5 tbsp coconut oil (slightly warmed to make it runny, for more consistent mixing)
- 1/3 cup rice malt syrup
Final step
- Line oven pan with baking powder and spread mix evenly
- Optionally drizzle vanilla extract over top
- Cook at 180C for about 10mins
